6 eggs
1 cup ham, sliced or cubed
1 cup red pepper, diced
¼ cup red onion, diced
1 jalapeno, chopped
Cheese of your choice, shredded
Avocado
Ray’s No Sugar Added Original Barbecue Sauce
Optional: Scallions or green onion for garnish
Directions
In a skillet over medium heat melt butter and cook ham, peppers, onion and jalapeno
Beat eggs and add to the skillet. Continue cooking until eggs are cooked.
Add shredded cheese to eggs and allow to melt
Top with avocado and Ray’s No Sugar Added Original Barbecue Sauce.
Optional: Top with scallion or green onion for garnish
