Ray’s Grilled Shrimp Skewers
Under 15 Minutes
1 pound large shrimp, peeled and deveined
1 red pepper, cut into 1-inch pieces
1 green pepper, cut into 1-inch pieces
1 yellow pepper, cut into 1-inch pieces
1 yellow onion, cut into 1-inch pieces
1 summer squash, cut into rounds and halved
1 zucchini, cut into rounds and halved
½ cup Ray’s No Sugar Added Original Barbecue Sauce
½ cup Ray’s No Sugar Added Honey Mustard Flavored Dipping Sauce
Gather ingredients and thread one skewer* with shrimp and one alternately with peppers, onion, zucchini and summer squash and place in a baking dish.
In two small bowls, pour Ray’s No Sugar Added Original Barbecue Sauce and Ray’s No Sugar Added Honey Mustard Flavored Dipping Sauce.
Brush half the Honey Mustard and half the Barbecue Sauce, coating the kabobs.
Heat grill to medium-high heat. Grill for 3-4 minutes per side, until cooked through.
Remove skewers from grill and let rest for 10 minutes. Brush again with sauce and serve.
*Make sure to soak wooden (or use metal) skewers for 30 minutes before cooking so they don’t burn while on the hot grill.
