Hickory Bourbon BBQ Beef Tenderloin

Ray's No Sugar Added barbecue sauce bottles

Ingredients

  • 1/2 of a sweet onion, diced
  • 1/2 of a red bell pepper, diced
  • 4 oz. bourbon
  • 1 bottle of 18.5-oz. Ray’s No Sugar Added Hickory Barbecue Sauce
  • Four 8-oz. beef tenderloin fillets
  • Butter

(This recipe can be made using any good cut of meat or chicken or pork loin).

Directions

  1. In a small saucepan over medium heat, sauté onions and peppers in butter until soft. Add bourbon and Ray’s No Sugar Added Hickory Barbecue Sauce and simmer 2-3 minutes.
  2. Place fillets of beef in small shallow pan, add bourbon barbecue sauce and marinate in refrigerator for 3-4 hours.
  3. Remove fillets from container and heat
  4. Pour bourbon barbecue sauce in small saucepan and bring to a boil, then reduce to a simmer. Place beef on grill and baste with sauce as they cook to desired doneness.
  5. Top remainder of sauce on fillets.
