Barbecue Chicken Lettuce Cups

Ray's No Sugar Added barbecue sauce bottle

Ingredients

  • 1 pound chicken breast, cubed
  • Iceberg lettuce
  • ¼ cup red onion, chopped
  • ¼ cup scallions, chopped
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste
  • 1 cup Ray’s No Sugar Added Sweet & Spicy Barbecue Sauce
  • 1-2 tablespoons olive oil

Directions

  • Heat oil in a large skillet and add in chicken. Season with garlic powder, onion powder and salt and pepper. Cook until meat is cooked through.
  • Remove from heat and add to a medium sized bowl. Add Ray’s No Sugar Added Sweet & Spicy Barbecue Sauce to chicken and toss to coat.
  • Fill lettuce leaves with chicken and top with red onion and scallions.
