Barbecue Chicken Lettuce Cups

Ingredients
- 1 pound chicken breast, cubed
- Iceberg lettuce
- ¼ cup red onion, chopped
- ¼ cup scallions, chopped
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper to taste
- 1 cup Ray’s No Sugar Added Sweet & Spicy Barbecue Sauce
- 1-2 tablespoons olive oil
Directions
- Heat oil in a large skillet and add in chicken. Season with garlic powder, onion powder and salt and pepper. Cook until meat is cooked through.
- Remove from heat and add to a medium sized bowl. Add Ray’s No Sugar Added Sweet & Spicy Barbecue Sauce to chicken and toss to coat.
- Fill lettuce leaves with chicken and top with red onion and scallions.
