Barbecue Chicken and Zoodles

Ingredients

  • 1-pound boneless, skinless chicken breasts
  • 4 zucchini
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup Ray’s No Sugar Added Original Barbecue Sauce

Directions

  1. Heat oven to 450 F.
  2. Place chicken on a lined baking sheet and season with salt and pepper. Bake in the oven for 15 minutes.
  3. While chicken is baking, spiralize zucchini into noodles and season with salt and pepper.
  4. Heat olive oil in skillet over medium-high heat. Add spiralized zucchini and sauté for 5-6 minutes until tender. Add garlic and sauté for an additional 1 minute.
  5. Pull chicken out and brush the top side with Ray’s No Sugar Added Original Barbecue Sauce. Return to the oven and cook for 5-8 minutes longer, or until the internal temperature is 160°F and the juices run clear.
  6. Slice chicken and place on top of zoodles.
