Barbecue Chicken and Zoodles

Ingredients

  • 1-pound boneless, skinless chicken breasts
  • 4 zucchini
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup Ray’s No Sugar Added Original Barbecue Sauce

Directions

  • Heat oven to 450 F.
  • Place chicken on a lined baking sheet and season with salt and pepper. Bake in the oven for 15 minutes.
  • While chicken is baking, spiralize zucchini into noodles and season with salt and pepper.
  • Heat olive oil in skillet over medium-high heat. Add spiralized zucchini and sauté for 5-6 minutes until tender. Add garlic and sauté for an additional 1 minute.
  • Pull chicken out and brush the top side with Ray’s No Sugar Added Original Barbecue Sauce. Return to the oven and cook for 5-8 minutes longer, or until the internal temperature is 160°F and the juices run clear.
  • Slice chicken and place on top of zoodles.
